Small Kid Time Recipes: Haupia!

 Ingredients

  • 1 1/2 cups coconut milk
  • 1 1/2 cups whole milk
  • 1 teaspoon vanilla
  • 6 Tablespoons sugar
  • 5 Tablespoons corn starch
  • 1/4 cup toasted coconut (optional)

Procedures

  1. Butter an 8 x 8 baking dish. Add coconut milk, milk and vanilla to blender. Blend for about 30 second to thoroughly combine.

  2. Pour mixture into a medium saucepan and whisk in sugar and corn starch. Heat over medium while whisking constantly until mixture begins to thicken. Reduce heat to low and cook for 10 more minutes, continuously whisking. Pour into prepared baking dish and gently shake back and forth to settle. Let cool uncovered on the counter for about 10 minutes then cover with plastic wrap and refrigerate until firm, about an hour.

  3. Using a sharp knife cut into 16 equal-sized squares. Sprinkle with toasted coconut, if desired. Serve cold.

Small Kid Time Recipes: White Chocolate Macadamia Nut Cheesecake

Prep Time: 20 | Cook Time: 1 hour 40 minutes | Ready In: 6 hours
Ingredients

crust:
2 1/2 cups vanilla wafer crumbs
1/2 cup chopped Island Princess macadamia nuts
3 tablespoons sugar
Pinch of salt
6 tbsp unsalted butter, melted

cheesecake:
2 pounds (four 8-ounce boxes) cream cheese, at room temperature
1 1/3 cups sugar
1/2 teaspoon salt
2 teaspoons pure vanilla extract
4 large eggs, at room temperature
1 1/3 cups heavy cream
4 ozs of white chocolate melted and cooled.
chopped macadamia nuts for garnish


Cooking Process

crust:
Butter a 9-inch springform pan—choose one that has sides that are 2 3/4 inches high (if the sides are lower, you will have cheesecake batter leftover)—and wrap the bottom of the pan in a double layer of aluminum foil; put the pan on a baking sheet or use a cheesecake moat.
Stir the crumbs, nuts, sugar and salt together in a medium bowl. Pour over the melted butter and stir until all of the dry ingredients are uniformly moist. (I do this with my fingers.) Turn the ingredients into the buttered springform pan and use your fingers to pat an even layer of crumbs along the bottom of the pan and about halfway up the sides. Don't worry if the sides are not perfectly even or if the crumbs reach above or below the midway mark on the sides—this doesn't have to be a precision job. Put the pan in the freezer while you preheat the oven.
Center a rack in the oven, preheat the oven to 350°F and place the springform on a baking sheet. Bake for 10 minutes. Set the crust aside to cool on a rack while you make the cheesecake.
Reduce the oven temperature to 325°F.

cheesecake:
Put a kettle of water on to boil.

Working in a stand mixer, preferably fitted with a paddle attachment, or with a hand mixer in a large bowl, beat the cream cheese at medium speed until it is soft and lives up to the creamy part of its name, about 4 minutes.

With the mixer running, add the sugar and salt and continue to beat another 4 minutes or so, until the cream cheese is light.

Beat in the vanilla.

Add the eggs one by one, beating for a full minute after each addition—you want a well-aerated batter.

Reduce the mixer speed to low and stir in the heavy cream.

Turn off your mixer and pour in the cooled melted white chocolate.

Stir into the batter with a rubber spatula.

Put the foil-wrapped springform pan in the roaster pan or better yet use a cheesecake moat.

Give the batter a few stirs with a rubber spatula, just to make sure that nothing has been left unmixed at the bottom of the bowl, and scrape the batter into the springform pan. The batter will reach the brim of the pan. (If you have a pan with lower sides and have leftover batter, you can bake the batter in a buttered ramekin or small soufflé mold.)

 Put the roasting pan in the oven and pour enough boiling water into the roaster to come halfway up the sides of the springform pan again, I would strongly recommend using a cheesecake moat to prevent your cheesecake from getting ruined.  Instead of putting your springform pan in an aluminum roaster pan, you would put it in the cheesecake moat which will protect it from water damage and provide the necessary water barrier to produce perfect cheesecakes!

Bake the cheesecake for 1 hour and 30 minutes, at which point the top will be browned (and perhaps cracked) and may have risen just a little above the rim of the pan.

Turn off the oven's heat and prop the oven door open with a wooden spoon. Allow the cheesecake to luxuriate in its water bath for another hour.

After 1 hour, carefully pull the setup out of the oven, lift the springform pan out of the roaster—be careful, there may be some hot water in the aluminum foil—remove the foil. Let the cheesecake come to room temperature on a cooling rack.

When the cake is cool, cover the top lightly and chill the cake for at least 4 hours, although overnight would be better.

Serving:
Remove the sides of the springform pan— I use a hairdryer to do this (use the dryer to warm the sides of the pan and ever so slightly melt the edges of the cake)—and set the cake, still on the pan's base, on a serving platter. Adorn the top of the cheesecake with the chopped macadamia nuts. The easiest way to cut cheesecake is to use a long, thin knife that has been run under hot water and lightly wiped. Keep warming the knife as you cut slices of the cake.

Storing:
Wrapped well, the cake will keep for up to 1 week in the refrigerator or for up to 2 months in the freezer. It's best to defrost the still-wrapped cheesecake overnight in the refrigerator.

Small Kid Time Recipes: Kona Coffee Bars

 
Prep Time: 10 min. | Cook Time: 20 min. | Ready In: 30 min.
 
Ingredients
  • 2/3 cup brown sugar
  • 1/2 cup butter or margarine
  • 2 eggs
  • 1-1/2 Tbs. instant Kona Coffee
  • 1/2 tsp. vanilla
  • 1-1/4 cups flour
  • 1/2 tsp. baking soda
  • 1 cup semi-sweet chocolate pieces
  • 3/4 cup chopped pecans

Cooking Process

Preheat electric oven to 375 degrees F.  Grease an 8 inch square pan.  In a large bowl  of electric mixer, cream sugar and butter.  Add eggs, instant coffee, and vanilla;  mix well.  Sift flour and baking soda;  mix into butter mixture.  Stir in chocolate and pecans.  Pour into prepared pan.  Bake for 20 minutes.

how to serve

Cool and cut into bars.  Makes 16 servings.

Small Kid Time Recipes: Guri Guri (pronounced Goody Goody)

 
Prep Time: 10 minutes | Cook Time: | Ready In: Freeze 2 hours
Ingredients
 
2 cans (12 oz.) strawberry soda
1 can (12 oz.) 7 UP
1 can (14 oz.) sweetened condensed milk

Cooking Process
Lightly grease a 13x9-inch pan. Combine sodas and milk and pour into prepared pan. Freeze. When edges are hard and the center is still soft; stir ingredients. Return to freezer. Allow to set to desired consistency. At least 1 hour. Optional to transfer mixture to ice cream maker. Churn according to directions. Freeze as directed.

how to serve
Feel free to substitute for your favorite flavor, instead of strawberry.....use orange, rootbeer, grape etc.

Small Kid Time Recipes: Layered Jello with Condensed Milk!

 
Prep Time: 120 | Cook Time: 10 | Ready In: 130
 
Ingredients
4 packages JELLO (3 oz each) -
orange, lime, lemon, strawberry (or pick whatever flavors you like)
6 envelopes KNOX unflavored gelatin
1 cup sweetened condensed milk
Cooking Process
ix 1 cup condensed milk with 1 cup hot water. Set aside. Mix 2 envelopes Knox gelatin with 1 cup hot water; combine with milk mixture and set aside

Combine Orange JELLO, 1 envelope Knox gelatin and 1-1/2 cups hot water. Cool, then pour into a 9×13 pyrex. Place in refrigerator to set for about 30 minutes.

Pour about 1 cup of the milk mixture for the next layer. Refrigerate to set. Now each layer will only take 15 minutes to set

Combine lime JELLO, 1 envelope Knox gelatin and 1-1/2 cup hot water. Cook, and pour carefully over the milk mixture, then place in the refridgerator for another 15 minutes.

Pour about 1 cup of the milk mixture for the next layer. Refrigerate to set. Now each layer will only take 15 minutes to set

Combine lemon JELLO, 1 envelope Knox gelatin and 1-1/2 cups hot water. Cool, then pour into a 9×13 pyrex. Place in refrigerator to set for about 15 minutes.

Pour about 1 cup of the milk mixture for the next layer. Refrigerate to set. Now each layer will only take 15 minutes to set

Finally end with the strawberry! And set til you’re ready to serve

Cut into squares and arrange on platter... looks as good as it tastes!!

Small Kid time Recipes: Guava Chiffon Cake

GUAVA CHIFFON CAKE

Bullet Batter:
2-3/4 cups cake flour
2/3 cup sugar
4 teaspoons baking powder
1 teaspoon salt
1/2 cup salad oil
1/2 cup water
3/4 cup guava juice concentrate, thawed, undiluted
5 egg yolks, slightly beaten
2 teaspoons vanilla
2-3 drops red food coloring


Bullet Meringue:
7 egg whites
1/2 teaspoon cream of tartar
1/2 cup sugar


Preheat oven at 325 degrees and lightly grease the bottom of an 11-by-13-inch pan.

To make batter, sift together flour, sugar, baking powder and salt.

Make a well in the center; add oil, water, guava juice, egg yolks and vanilla. Beat with a spoon until mixture is smooth. Add food coloring. Set aside.

To make meringue, beat egg whites with cream of tartar until soft peaks form. Gradually beat in 1/2 cup sugar until stiff.

Gently fold batter into meringue until barely mixed. Pour into pan. Bake 35-40 minutes, or until a pick inserted in the center comes out clean.

Small Kid Time Recipes: Malasadas


  1 Tbsp Rapid Rise yeast ( I use Fleischman’s Rapid Rise yeast)
·         1 tsp Sugar
·         ¼ cup Warm water
·         3 cup Flour
·         ¼ cup Sugar
·         ¼ cup Melted butter
·         3 Eggs
·         ½  cup Evaporated milk
·         ½  cup Water
·         Vegetable oil for frying
·         1/8 tsp nutmeg
·         Mix Fleischman rapid rise yeast with melted butter, condensed milk and water (120 to 130 degrees), 3 beaten eggs at room temperature, half of the flour. 
·         Mix well
·         Let it sit for 10 minutes            
·         Add the rest of the flour, mix well
·         Let rise for an hour in a warm draft free area. Or until double in size.
·         Heat vegetable oil to 375 degrees
·         Make 2 to 3 inch balls of Malasada dough
·         Cook in vegetable oil for about 6 minutes or until golden brown and cook through
·         Set on paper towel to cool just a little
·         roll in  sugar or shake in a bag with ½ cup of sugar
·         Ready to eat
 Tip;
When using Fleischman’s RAPID RISE yeast, water and condensed milk should be between 120 to 130 degrees to activate the yeast.  140 degrees is too hot and will kill the yeast.  Fleischman’s RAPID RISE yeast does not have to go through the second rise process that other yeasts have to go through, such as Fleischman’s ACTIVE  DRY yeast.  
              
Heat oil to 373 degrees. 
·         If oil is too hot; the Malasada dough will pop right back up to the surface and the outside will brown too quickly while the inside will be undercooked
·         If the oil isn’t hot enough;  the malasadas dough will sit at the bottom of the oil
·         If the temperature is right; The malasada dough should sit on the bottom of the oil for a few seconds and then rise to the surface.  It should take about 3 minutes to cook on each side. Total of 6 minutes until a nice golden brown.   
Test;   Make a 2 to 3 inch ball and drop carefully into the oil.  Cook for 6 minutes, take it out and cut in half to see if it is cooked completely through and the outside is a nice golden brown.   
Making the malasadas ball the same size;
·         Oil hands if making balls with hands
·         Or use oiled spoons
·         Equal size malasadas,  equal cooking time

Small Kid Time Recipes: Butter Mochi


Butter mochi is a beloved dessert from Hawaii and one of my all-time favorite desserts as a kid! It's good to have parents born and raised in Hawaii!



Ingredients
1 stick unsalted butter, melted
1 1/2 cups superfine sugar*
1 box (16 ounce) mochiko flour
1 can (12 ounce) evaporated milk + 1/2 cup water
1 can (13.5 ounce) coconut milk
4 large eggs
2 teaspoons baking powder
1 teaspoon vanilla extract
**NOTE**
You can use up to 2 1/4 cups sugar without increasing the volume of the liquid ingredients.  It all depends on how sweet you want the mochi to be.

Add one stick unsalted butter to a microwave safe bowl and melt in microwave for 30 seconds.  Add sugar and mix until well combined.  Add vanilla extract, then add eggs, one at a time.  Mix until well incorporated.  Add in mochiko flour and baking powder, and continue to mix.

Combine evaporated milk and water in a separate bowl.  Whisk to blend.  Add to mochiko mixture in 2 parts, mixing well between addtions.  Next add in coconut milk,  whisking until well blended.

Pour mixture into a 9” x 13” pan and bake for one hour at 350F.  Promptly remove from oven, and let cool completely.  To serve, cut into 1“ x 2” bars.

Topped with shredded coconut if desired.
