Cajun Garlic Fries with Bulgolgi from Nguyen's Kitchen in Orange


Located near the Children's Hospital of Orange County is Nguyen's Kitchen. They offer Vietnamese favorites and some modern twists such as sandwiches, pastas, garlic noodles and rice bowls. But the reason I stopped in was to try their Cajun garlic fries and you can add bulgolgi on top of that to create the above masterpiece. The bulgolgi is tender and flavorful, the fries are crisp and tasty with Cajun spices and garlic. This can be a meal all by itself.


I washed this all down with a refreshing peach and lychee green tea. It's not overpoweringly sweet and the flavors of the peach and lychee blend in perfectly with the green tea.

Whiskey Peach Smash Recipe!

 
Makes 1 drink
 
Ingredients:

2 ounces canadian whiskey
1 small peach, peeled, pitted and quartered quarters
3 mint leaves
1/2 lemon, peel, pith and seeds removed, cut into chunks
1 ounce water
1/2 ounce simple syrup
1 sprig mint, and peach slice (to garnish)

Directions:

1 Muddle all ingredients except whiskey in a bar glass.
 
2 Add whiskey and shake with ice.
 
3 Strain into an ice-filled rocks glass and garnish with a sprig of mint and a peach slice.

Southern Fried Peach Pies Recipe!

 
Makes 6-10 pies
 
Ingredients:

For dough

2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1/4 cup Crisco
milk
butter

For filling

6 ounces dried peaches
water
1 1/2 cups sugar
oil (for frying)

Directions:

1 Place flour, baking powder and salt in a bowl.
 
2 Cut in crisco with pastry cutter or fork.
 
3 Add enough milk to make dough, do not mix too much.
 
4 Let biscuit dough sit for 1 hour.
 
5 Meanwhile take dried peaches and put in sauce pan with enough water to cover and cook until soft.
 
6 Add 1 1/2 cups of sugar and cook 15 minuts more.
 
7 Remove from stove and mash with potato masher; set aside.
 
8 Preheat electric skillet to 300 degrees.
 
9 Take biscuit dough and pull enough off for one pie, roll it out thin on floured board. Take a saucer, place on rolled out dough and trim around it with a sharp knife.
 
10 Place two big spoons of peaches on one side of dough and lap the other side over in half moon shape. Seal the edges with a fork.
 
11 Fry pies in skillet until brown, then turn and brown other side.
 
12 Drain on paper towels.
 
13 These pies can be eaten warm or stored in a container and eaten the next day room temperature they are awesome either way.

Peach Almond Ice Cream Recipe!

 
Serves 2 - 4
 
Ingredients:

1 cup almonds, soaked overnight, discard soaking water
1 cup water
3 -4 peaches
5 dates
4 drops stevia
1 teaspoon vanilla extract
1 teaspoon lemon juice

Directions:
 
1. Place soaked almonds and water in vita-mix.
  
2. Blend on highest setting until smooth, about 1 minute, add a bit more water if blending is a challenge.
  
3. Remove almond mixture from vita-mix and strain through a fine mesh paint strainer bag, discarding solids. 
 
4. Place almond mixture in rinsed out vita-mix container, blend in peaches and dates on highest setting until smooth.   
 
5. Blend in stevia, vanilla and lemon juice.
 
6. Place mixture in ice cream maker and process according to instructions.

Peach & Tomato Salsa Recipe!

Makes 12 pints
Ingredients:

9 cups fresh peaches, chopped
2 tablespoons lime juice (fresh or bottled)
4 cups fresh tomatoes (May substitute canned "No salt added" diced tomatoes )
2 large bell peppers, diced
1 large red bell pepper, diced
2 cups sweet onions
1/2 cup jalapeno, diced (canned or fresh)
1/4 cup cilantro
1 cup vinegar
3 garlic cloves, chopped
1 tablespoon cayenne pepper
3 tablespoons honey
1 tablespoon crushed red pepper flakes

Directions:

1 Peel, pit, and chop peaches, and mix with lime juice.
2 Peel and chop fresh tomatoes to measure 4 cups (If using canned diced tomatoes, drain excess juice before measuring).
3 Combine all fresh fruits and vegetables in a large stainless steel pot. Add vinegar, honey,cilantro, cayenne, and crushed red pepper. ( Do not add canned vegetables yet).
4 Bring mixture to boil over medium heat. Cook for 3 minutes, stirring frequently.
5 Add any canned vegetables, and cook for 3 more minutes. .Continue frequent stirring.
6 Turn heat to simmer.
7 Ladle salsa into hot sterilized canning jars, leaving 1/4 inch headspace. Wipe jar rim with clean cloth or napkin. Top with new sterilized lid. Screw on band tightly.
8 Place jars in canning pot. Add water, making sure tops of lids are covered.
9 Bring canner to boil, and process for 10 minutes.
10 Remove jars from canner, and place on towel in a cool spot.
11 In about an hour, check to make sure that lids have sealed. Refrigerate or reprocess any that are not sealed.
12 Allow to sit without moving for about 2 days.
13 Label and store jars in a cool, dark place.

Cream Cheese Peach Cake Recipe!

 
Ingredients:

1/2 cup milk
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 (3 1/2 ounce) package vanilla pudding mix (not instant)
1 egg
3 tablespoons butter, softened
1 (20 ounce) can peaches (sliced variety)
8 ounces cream cheese, softened
1/2 cup sugar
3 tablespoons syrup, from peaches
1 tablespoon sugar
1/2 teaspoon cinnamon

Directions:

1 Combine first seven ingredients in a large bowl, beating 2 minutes at medium speed.
 
2 Pour into a well greased "deep dish" pie plate.
 
3 Drain peaches, reserving some syrup. Arrange peach slices over this mixture.
 
4 Beat cream cheese, peach syrup and 1/2 cup sugar at medium speed for 2 minutes.
 
5 Spoon and spread over peaches to within 1 inch of batter.
 
 6 Mix sugar and cinnamon together and sprinkle over top of everything.
 
7 Bake at 350 degrees until crust is golden brown (about 30 to 35 minutes).

Peach Mimosa Recipe!

 
Ingredients:

2 cups peach nectar, chilled
1 1/3 cups orange juice, chilled
2/3 cup grenadine
1 (750 ml) bottle Brut champagne, chilled

Directions:

1 Combine nectar and orange juice in a pitcher.
 
2 Spoon 1 tablespoon grenadine syrup into each of 10 champagne glasses.
 
3 Add 1/3 cup orange juice mixture to each glass.
 
4 Top with champagne.
 
5 Serve immediately.

Deluxe Peach Ice Cream Recipe!

Makes: 1 Gallon
 
Ingredients:

6 cups mashed peaches
1 cup sugar
3 eggs
1 1/2 cups sugar
2 tablespoons all-purpose flour
1/2 teaspoon salt
1 quart milk
1 cup whipping cream
1 tablespoon vanilla extract

Directions:

1 Add peaches and 1 cup sugar to a large bowl; stir to mix well; set aside.
 
2 In a large mixing bowl, beat eggs using an electric mixer until they are frothy.
 
3 In another bowl, mix together 1 1/2 cup sugar, flour, and salt.
 
4 Gradually add sugar mixture to eggs, beating using electric mixer until thick.
 
5 Add in milk; mix well.
 
6 Pour egg mixture into a large pot; cook over low heat and stir constantly, about 15 minutes or until the mixture thickens and coats a metal spoon.
 
7 Remove pot from heat and set in cold water; stir gently until mixture is cool.
 
8 Add in cream and vanilla; stir to combine.
 
9 Add in peaches; stir to combine.
 
10 Pour mixture into the container of a 1-gallon electric ice cream freezer.
 
11 Freeze according to the machine's directions.
 
12 Let ripen at least 1 hour.
