Root Beer Float Cookies Recipe!

Makes 60 cookies
 
Ingredients:

1 cup granulated sugar
1 cup brown sugar, packed
1 cup butter, softened
1/2 cup buttermilk
2 eggs
2 teaspoons root beer extract
1 teaspoon vanilla
4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt

Frosting

1 cup confectioners' sugar
1 tablespoon half-and-half
2 teaspoons butter, softened
1 teaspoon root beer extract

Directions:

1 Preheat oven to 375 degrees.
 
2 Lightly grease cookie sheets.
 
3 In a large bowl combine granulated sugar, brown sugar, 1 cup butter, buttermilk and eggs, 2 teaspoons root beer extract and vanilla.
 
4 Beat at medium speed until well blended.
 
5 Add flour baking soda and salt.
 
6 Beat on low speed until dough forms.
 
7 Drop by heaping teaspoonful 2 inches apart on cookie sheet.
 
8 Bake 10-12 minutes or until set. Cool completely.
 
9 In a mixing bowl combine frosting ingredients beat at low speed of electric mixer until smooth.
 
10 Spread frosting on evenly over cookies.
 
11 Let dry completely before storing in container.

Strawberry & Cream Cheese Sandwich Cookies Recipes!

 
Makes 20 cookies
 
Ingredients:

1 (8 ounce) package of softened cream cheese (reduced fat o.k.)
1/4 cup strawberry preserves
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
40 vanilla wafers

Directions:

1 In a medium bowl, smash cream cheese with a fork.
 
2 Combine the rest of the ingredients (except the vanilla wafers) together with the cream cheese.
 
3 Mix well.
 
4 Let chill in the refridgerator for at least 30 minutes.
 
5 On the flat side of the wafer, spread 2 tsp of mixture.
 
6 Then top with another wafer to make a sandwich.
 
7 Sprinkle with powdered sugar.

Devil's Food Peanut Butter Chip Cookie Recipe!

 
Makes 4 to 5 dozen cookies
 
Ingredients:

2 eggs
1 teaspoon vanilla extract
2/3 cup shortening
1 (18 1/4 ounce) box devil's food cake mix
2 cups peanut butter chips

Directions:

1 Preheat oven to 375 degrees.
 
2 Beat together eggs, vanilla, and shortening with ½ of cake mix until fluffy.
 
3 Stir in remaining cake mix and peanut butter chips.
 
4 Drop rounded teaspoonfuls of dough 2 inches apart onto ungreased cookie sheet.
 
5 Bake 10-12 minutes
 
6 Remove from cookie sheets and cool on wire racks.

Devil's Food Fudge Cookies Recipe!

 
Makes 24 to 36 cookies
 
Ingredients:

1 box duncan hines moist deluxe devil's food cake mix
1/2 cup vegetable oil
2 medium eggs
1 cup semi-sweet chocolate chips
1/2 cup pecans or 1/2 cup walnuts, chopped

Directions:

1 Combine the cake mix, eggs and oil until well blended.
 
2 Add chocolate chips and nuts.
 
3 Use hands (or spoon) to mix/smush/knead it all together.
 
4 form into balls and bake at 350° for 10-12 min.
 
5 they'll still look soft, like they're not done enough, but the bottoms will be getting brown.
 
6 Allow the cookies to cool for one minute on the baking sheet before moving the cookies to a wire rack to finish cooling.
