Strawberry and Cream Cheese Crepes Recipe!

 
Makes 12 servings
 
Ingredients:

2 eggs
1/4 cup milk
2 tablespoons water
4 tablespoons flour
1/8 teaspoon salt

FILLING

4 ounces cream cheese, softened
6 tablespoons cottage cheese
1/4 cup sugar

SAUCE

2 cups fresh strawberries (or frozen unsweetened & thawed)
1 tablespoon lemon juice
1/3 cup sugar

Directions:

1 Batter:.
 
2 Beat the eggs, milk and water. Add flour and salt, beat just until smooth. Lightly oil a crepe pan or medium skillet. Heat the pan over medium heat. When pan is hot spoon 2 tablespoons batter into pan and rotate the pan to spread evenly. When edges of crepe are browned, turn crepe onto a plate.
 
3 Filling:
 
4 Place cream cheese, cottage cheese and sugar in mixer. Blend until smooth. Set aside.
 
5 Sauce:.
 
6 Coarsely chop the strawberries. Add lemon juice and sugar. Toss lightly. When ready to serve spoon 2 tablespoons filling into each crepe and roll up. Arrange crepes seam side down on plate. Serve immediately with fruit sauce. You may top with whipped cream if desired. Enjoy!
 

French Toast Souffle Recipe!

 
Makes 2 souffles
 
Ingredients:

1/2 cup butter
8 ounces cream cheese
1/2 cup maple syrup
2 loaves French bread, cubed
12 eggs
3 cups half-and-half
1 1/2 teaspoons vanilla
cinnamon, for dusting
powdered sugar, for dusting

Directions:

1 Butter 2 7x11 baking dishes, fill half full with bread cubes.
 
2 In a small bowl mix softened butter, cream cheese, and syrup.
 
3 Spoon mixture over bread cubes and distribute evenly.
 
4 In a large bowl beat eggs, half and half, and vanilla.
 
5 Pour egg mixture over bread, making sure all bread cubes are moistened.
 
6 Dust with cinnamon, cover, and store overnight in refrigerator.
 
7 In the morning, bake for 55-60 minutes in a 350°F oven.
 
8 Dust with powdered sugar.
 
9 Serve with fruit, maple syrup, and crushed walnuts to sprinkle on top.
 

Pepperoni Omelet Recipe!

 
Ingredients:

3 medium eggs
1/2 teaspoon Tabasco sauce
1 medium potato
1 medium onion
1 medium tomato, coarsely diced
50 g pepperoni, thinly sliced
50 g tasty cheese, grated
1/4 teaspoon ground black pepper

Directions:

1 Whisk eggs in a bowl with Tabasco sauce.
 
2 Grate onion and potato into same bowl.
 
3 Add diced tomato and mix together.
 
4 Place mixture into a lightly oiled small skillet or fry pan over medium to low temperature.
 
5 Immediately layer pepperoni slices over the top and sprinkle with grated cheese.
 
6 Grind pepper over the top.
 
7 Cook around 15-20 minutes until egg has set on the top and cheese has melted, there is no need to flip it.
