Grilled Pimiento Cheese Sandwich Recipe!

Ingredients

  • Southern Pimiento Cheese (see recipe at the bottom)
  • 1/3 cup butter, softened
  • 16 sourdough bread slices
  • 16 thick applewood-smoked bacon slices, cooked $
  • Strawberry preserves

Preparation

  1. 1. Prepare Miss Mattie's Southern Pimiento Cheese as directed.
  2. 2. Butter 1 side of each bread slice. Place 8 bread slices, buttered sides down, on a hot griddle or in a large skillet over medium heat.
  3. 3. Spread 1/2 cup pimiento cheese over each bread slice on griddle. Top each with 2 cooked bacon slices.
  4. 4. Place remaining 8 bread slices, buttered sides up, on bacon. Turn sandwiches, and cook 5 to 7 minutes or until golden brown. (Pimiento cheese should be slightly melted.) Serve with strawberry preserves.

Ingredients

  • 1/2 cup chopped pecans
  • 1 cup mayonnaise $
  • 1 (7-oz.) jar diced pimiento, drained
  • 1/2 cup chopped jarred sweet-hot pickled jalapeno pepper slices
  • 1 tablespoon liquid from sweet-hot pickled jalapeno pepper slices
  • 4 cups freshly grated mild Cheddar cheese (1 lb.)
  • Garnishes: sweet-hot pickled jalapeno pepper slices, toasted chopped pecans

Preparation

  1. Bake 1/2 cup chopped pecans at 350° in a shallow pan 8 to 10 minutes or until toasted and fragrant, stirring halfway through. Cool 20 minutes. Stir together mayonnaise, diced pimiento, pickled jalapeño pepper slices, liquid from sweet-hot pickled jalapeño pepper slices, and toasted pecans. Stir in Cheddar cheese until well blended. Garnish, if desired.

Chili Cheese Dogs in Beach Blankets Recipe!

Servings: 8
Ingredients: 
3/4 lb ground turkey
1 tablespoon chili powder
2 teaspoons onion powder
1 teaspoon garlic powder
salt and pepper
2 tablespoons tomato paste
14 ounces pizza dough (refrigerated)
1 1/2 cups cheddar cheese, shredded
8 hot dogs

Directions:

1 Preheat oven to 400 degrees F.
2 Place the ground turkey in a large non-stick skillet over medium high heat.
3 Add the chili, onion and garlic powders and cook stirring frequently (breaking up into small bits) until browned, 6 to 7 minutes.
4 Season with salt and pepper.
5 Stir in the tomato paste, then add 1/4 cup water to help loosen it up.
6 Lower the heat and simmer until thick, about 5 minutes.
7 Remove from heat.
8 On a work surface, roll out the pizza dough and stretch into a big rectangle.
9 Cut the dough lengthwise and then cut each half crosswise into 4 equal pieces (you should have 8 pieces in all).
10 In the center of each rectangle, drop some chili and sprinkle with cheese.
11 Set a hot dog on top and wrap the dough around it, sealing in the chili and cheese (the ends of each hot dog should peek out).
12 Bake until golden, about 18 minutes.
13 Let cool slightly before serving.
