Banana Chocolate Chip Waffles Recipe!

 
Makes 8 waffles
 
Ingredients:

2 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 2/3-2 cups low-fat milk
1 medium banana, mashed (1/2 cup)
6 tablespoons vegetable oil
2 large eggs
1/2 cup mini chocolate chip

Directions:

1 Place dry ingredients in large mixing bowl and stir until mixed well. Add remaining ingredients and combine until well blended and smooth.
 
2 Let batter sit 5 minutes before using.
 
3 Preheat waffle iron.
 
4 Use 1/2 cup batter per waffle and cook until done (approx. 2 minutes).

Spiced Rum Breakfast Coffee Recipe!

 
Makes 10 cups
 
Ingredients:

1/4 cup ground coffee
1 cinnamon stick
3 cardamom seeds, in posds that have been broken open
1 teaspoon rum extract
10 cups water
milk, to taste
sugar or artificial sweetener, to taste

Directions:

1 In basket of drip coffee make place coffee grounds, cinnamon stick, and the 3 cardamom seed pods broken open.
 
2 Add 10 cups of water and brew.
 
3 When done brewing add 1 teaspoon Rum extract to brewed coffee.
 
4 Serve. Can add milk and sweetener if you like.

Double-Chocolate Devil's Food Pancakes Recipe!

 
Servings: 8
 
Ingredients:

2 cups flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup freshly brewed coffee
1/2 cup unsweetened cocoa powder
1/2 cup milk
1/2 cup melted butter
2 large eggs
1 teaspoon vanilla extract
1 cup mini chocolate chip

Directions:

1 In a mixing bowl, combine flour, sugar, baking powder, baking soda and salt.
 
2 In another bowl, whisk together coffee, cocoa powder, milk, melted butter, eggs and vanilla until combined; add to dry ingredients; blend.
 
3 Stir in the chocolate chips.
 
4 Heat a lightly oiled skillet over medium-high heat.
 
5 Pour 1/4 cup batter per pancake onto hot skillet.
 
6 Cook 2 or 3 minutes.
 
7 Turn and cook other side for 2 minutes.
 
8 Repeat with remaining pancakes.
 
9 To serve, top pancakes with confectioners' sugar and whipped cream.
 
10 Drizzle with chocolate syrup.

Restaurant Review: Louisa's Place (San Luis Obispo)

My friends Brian and Kevin went with me on a quick trip to Northern California this past weekend. Due to the closure of the Grapevine on the 5, we took the 101. We came across this great hole in the wall for breakfast in San Luis Obispo.
As it turned out, Louisa's has been named SLO County's Best Breakfast for the last three years!
I love the classic American diner feel!

So, we finally made some decisions! Here is the fresh homemade biscuit! Super fluffy and moist! Loved the steam coming off of it!
Kevin went with the sausage gravy and biscuit! Looks amazing!
Kevin went with the steak ranchero omelette! I love the home fries cause they look like fries!
Brian went with the chuckwagon that came with ham, bacon, sausage, two eggs and home fries!
I decided upon the tri-tip and eggs! Several tender medallions of tri-tip cooked to perfection with two eggs and home fries! Needless to say there was very little talking as we devoured our food! We left completely full and ready to hit the road! A classic American diner with great service and even better food! If you are ever in SLO, make Louisa's a must stop!
