EPCOT Recipes: General Tso's Chicken from Nine Dragons!

 Ingredients - Marinade

  1. 1 teaspoon chicken base (not bouillon; the paste-like mixture is available in gourmet stores and large supermarkets)
  2. Dash of white pepper
  3. Salt to taste
  4. Sugar to taste
  5. 1/2 teaspoon cooking wine
  6. 1/2 teaspoon sesame oil


Ingredients - Batter

  1. 3/4 cup all-purpose flour
  2. 1/4 cup cornstarch
  3. 1 heaping teaspoon baking powder
  4. 1/2 of a beaten egg
  5. 2 tablespoons oil
  6. 2/3 cup Water
  7. Pinch of salt


Ingredients - Sauce

  1. 1 tablespoon soy sauce
  2. 2 teaspoon ketchup
  3. 5 tablespoon white vinegar
  4. 5 tablespoon sugar
  5. 1/8 Tablespoon black pepper
  6. 1/8 Tablespoon chicken base
  7. Corn Starch to taste
  8. Vegetable oil to taste


Directions

  1. Combine marinade ingredients and let cubed chicken soak in liquid for 30 minutes.
  2. Combine batter ingredients. Set aside
  3. Combine Sauce ingredients. Set Aside.
  4. Heat cooking oil for frying, about 320?F.
  5. Using tongs, dips marinated chicken into batter and deep fry until golden.
  6. Drain well.
  7. Heat sauce in a large wok.
  8. Turn off heat.
  9. Add chicken pieces and toss to coat.
  10. Place chicken on a serving platter to serve.


Recommended Wine Pairing

White Wines - Pinot Grigio, Riesling, Gewurztraminer, Chenin Blanc
Blush/Rose Wines - White Zinfandel
